Bouchon Bakery's TKOs and milk

This weekend I made the TKOs from Bouchon Bakery. These are basically amped up, giant homemade Oreos. Using black cocoa powder from my co-op and Green & Black’s white chocolate these turned out pretty great. 

The thing I love about this cookbook is that it provides recipes by weight and with great precision. For example, the book tells you that at the bakery they use 18 grams of filling per cookie sandwich. 

I plan to make these again, but next time would make the ganache a little thicker by increasing the proportion of white chocolate to cream. I’d also make sure the cookies were all actually 1/8 inch thick and I would probably use about 24 grams of filling.
